My New Favourite Recipe.

My boyfriend and I absolutely LOVE trying new recipes, taking it in turns each week to choose a new one to try. A few months ago, he found this glorious pasta recipe online and, after altering it slightly, I’ve fallen in love with it and thought I’d share it with all of you. It’s perfect for students as not only is it affordable, it’s extremely filling and just a stunning meal for a date night, movie night with your friends, or even if you are feeling a little down and want to cheer up.

Ingredients for one
One cup of penne pasta
One diced chicken breasts
150ml of double cream
One tablespoons of green pesto
Cup of grated cheese
One clove of garlic

Yup. This is literally ALL YOU NEED to create this gorgeous little meal. A few recipes online add spinach or mushroom so you can alter it to your preference. I’d love to add some mushrooms to this but my boyfriend doesn’t like them (I know, weird) so here is a simple version of this amazing dish. Bare in mind that it’s an extremely filling meal! It usually takes me about 25 minutes to prep and cook!

Step 1: Boil some water and pop your pasta on a high heat, adding salt to the water to ensure your pasta boils faster. Make sure you stir it now and then otherwise your pasta will end up sticking together.

Step 2: While your pasta is boiling, dice up your chicken breast and add salt and pepper to it, giving it a bit of flavour.

Step 3: Butter up a pan on a medium heat and add your diced chicken, turning them every now and then.

Step 4: While waiting for the chicken and pasta, get a clove of garlic ready to be crushed, but only crush it when it’s ready to go in the pan, otherwise it will lose all flavour.

Step 5: Cut into a few bits of chicken to see if it’s cooked. If it’s pink, it needs more time, and if it’s white, then you are ready to add in the cream.

Step 6: Now that your chicken is cooked, pour in half of the double cream, stirring as you do so, and add in the four tablespoons of pesto and the crushed garlic.

Step 7: Your pasta should be done by now, so drain it and pour it straight in with the chicken, mixing in the rest of the cream and sprinkling cheese all over. Add a little more salt and pepper, and leave it to rest on a low heat for a few minutes.

Step 8: Once it’s ready, dish it up onto a plate and enjoy!

This recipe is honestly the nicest pasta dish I have ever tried. Cooking the chicken in butter makes it deliciously full of flavour, and the creamy, cheesy, pesto sauce is pure bliss! As a carb lover, I sometimes put a little ciabatta bread in the oven and eat it with my dinner!
